Slice a sweet potato and place slices in the bottom of a quiche pan. Bake at 400 degrees for about 20 minutes.. add your eggs and other desired ingredients. I did zucchini, spinach and tomatoes. Bake for another 30-40 minutes, until the egg is cooked.
