Veggie Fra Diavolo

1 teaspoon dried crushed red pepper flakes
3 tablespoons evoo 

1 onion, chopped 
1 can crushed tomatoes, chopped
I c sautéed mushrooms
1 c dry white wine
4 cloves garlic, chopped
3 tablespoon chopped fresh Italian parsley leaves

Fresh, chopped basil (I add a lot!)
Season with oregano and salt
2-3 Zucchinis, spiralized or sliced like noodles 



Heat skillet over medium-high heat. Add 3 tbsp oil until heated. Add in onions, mushrooms and garlic until soft.  Add tomatoes, wine, oregano and salt. Let simmer for sauce to thicken. Meanwhile, in another heated skillet with 1tbsp oil, add garlic & sautee zucchini noodles about 5 minutes. Season to taste. Once sauce is thickened, add in basil & parsley. Season with salt to taste.


You can mix in your noodles or plate separately with sauce on top - whatever you prefer!


Save yourself from the blood sugar spikes by using zucchini noodles to replace your usual pasta. Less processing, more nutrients! 


Love your pasta too much to give it up? Try half noodles and half zucchini noodles.. it's all about balance
