Spiced Apple Quinoa Breakfast

Mix together:

1 cup uncooked quinoa

1 1/2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/8 teaspoon ground cloves

2 apples, peeled, diced

2 eggs

2 cups skim or almond milk

1 tbsp maple syrup

1/4 cup almonds, chopped

1/4 cup raisins or cranberries

Bake at 350 degrees for about 1 hour

Quinoa is a whole grain that will slowly digest to help you stay fuller throughout the day. Mixed with fruit, nuts & spices, it makes a perfect make-ahead breakfast.
