As usual, I cook what I can ahead of time. I baked boneless, skinless chicken breasts and stored them in the fridge for the week. For Taco Tuesday, I cut up enough stips of chicken for a couple of tacos.
Sautee onions and peppers, then toss in the chicken and jalapenos towards the end just long enough to heat. Fill tacos with mixture and top with whatever else you want, like lettuce, cheese, avocado, etc.
For the rice, I made brown rice and stirred in tomatoes, cumin and cayenne pepper. Served with a side of black beans, rinsed and heated.
